Spinach, Mushroom and Bacon Saute

Ingredients

2 tablespoons
fat of choice (duck fat, bacon fat or coconut oil)
3 slices
thick cut bacon (chopped)
1 teaspoon
salt
1
onion (chopped)
12
large shiitake mushrooms (thinly sliced)
3 packages
frozen spinach (9-10 oz each, thawed and drained but not squeezed)
 
black pepper
 
ground nutmeg (optional)

Instructions

In a large saute pan over meduim cook chopped bacon in fat to desired crispiness. Remove bacon bits and reserve.Add ½ tsp salt and onion to the pan and sweat the onion, allowing it to go golden but not brown. Add mushrooms and the remaining salt and allow them to sweat for a few more minutes. Add spinach and simmer until the spinach is softened, adding a little water if it’s dry.Season with pepper and optional nutmeg and serve with the bacon bits.
