Spiralized “Pasta” Alfredo

Ingredients

1 bunch
lacinato kale (thinly sliced)
1 pinch
salt

olive oil

zucchinis, spiralized like spaghetti (we used a Spirooll)
 
chopped parsley (for garnish)
 
Dressing:
3⁄4 cups
almonds or cashews (soaked for a few hours)
1
lemon (juiced)
1 tablespoon
miso paste
1 clove
garlic
1⁄2
sweet red onion
3 tablespoons
nutritional yeast
2 tablespoons
olive oil
 
water as needed to process it

Instructions

Place the shredded kale in a bowl. Add a little salt and olive oil and rub it for a few seconds until the green becomes brilliant. Spiralize the zucchini, making sure to cut the pieces to a manageable length. Mix with the kale. Process the dressing ingredients. It will be very thick, that’s OK. Massage the dressing into the vegetables. Finish with parsley.
