Sukkah Harvest Quinoa

Ingredients

quinoa (12 oz)

medium yams (cooked, peeled and cubed)

large red pepper (cored and diced)
5
scallions (chopped)
3 ounces
cashews
 
salt (to taste)

Instructions

Cook the quinoa by package directions. Microwave yams with skin until soft. Cool, peel and cube. Combine all ingredients. Add salt to taste. Sprinkle with cashews.
