Peel carrots and beets and shred all ingredients in a food processor or grate or slice very thinly by hand. Drizzle with oil and vinegar, salt and pepper. Add any flavor you prefer: a squeeze of lemon, a tablespoon of grated ginger, a drizzle of honey, or follow the directions for vinaigrette dressing. Toss and serve.Variations: Suppers slaw can be varied endlessly.

- Add different low carb shredded vegetables and herbs such as greens, kale, broccoli stems, daikon radish, bok choy, peppers, parsley, mint, cilantro, basil.
- Add fruit: apples, pears, berries.
- Top with toasted slivered almonds, pumpkin seeds or crumbled goat cheese or feta.
