White Bean Salad with Parsley & Lemon Juice

Ingredients

cans of white beans (drained and rinsed well)

celery stalks (finely chopped)
1 cup
cabbage (finely chopped)
1⁄2
red onion (chopped)
1 cup
snow pea (sliced on the diagonal or coarsely chopped)
1 cup
finely chopped kale, spinach or arugula
1⁄2 cup
chopped parsley
3 tablespoons
dulse flakes (a sea vegetable)
1 dash
cayenne pepper
1⁄4 cup
olive oil
1⁄4 cup
white balsamic vinegar
1
lemon (juiced)
 
salt and pepper to taste
Yields:

Instructions

Prepare the beans and vegetables, and combine in a large bowl. Add dulse flakes and cayenne pepper. Add remaining ingredients and toss well.
