Zucchini, Cabbage & Broccoli Stem Slaw

Ingredients

zucchinis (shredded)

head of cabbage (shredded)

heads of broccoli (stems shredded, save florets for another use)
1⁄4 cup
light vinegar (such as coconut, white balsamic or cider vinegar)
3⁄4 cups
extra virgin olive oil
5 drops
stevia
1
lemon (juiced)
2 tablespoons
water
4 cloves
garlic
1
fresh herbs (like parsley or chives)
 
salt (to taste)

Instructions

Prepare vegetables and combine in a large bowl. Process remaining ingredients in a food processor or blender until smooth. Taste and adjust seasoning. Toss with slaw and serve.
