1head of cabbage (shredded)
2heads of broccoli (stems shredded, save florets for another use)
1⁄4 cuplight vinegar (such as coconut, white balsamic or cider vinegar)
3⁄4 cupsextra virgin olive oil
1fresh herbs (like parsley or chives)
Prepare vegetables and combine in a large bowl. Process remaining ingredients in a food processor or blender until smooth. Taste and adjust seasoning. Toss with slaw and serve.
