Can serve on cooked pasta or spaghetti squash or, for a totally raw meal, serve on a bed of raw zucchini strips or spirals. Strips can be made with a vegetable peeler. Spirals can be made on a spiral slicer.
Serve with julienne vegetables, those cut on a spruli gadget, or shredded vegetables such as zucchini; or serve sauce over baby spinach or other greens.
You can use this dressing for about two lbs. of roasted chicken or turkey, cut into cubes. We added six ribs of sliced celery and a cup of chopped walnuts.
We served on shredded cabbage and red pepper and topped with wedges of avocado.
Mix with salad greens or cooked grain such as brown rice or quinoa.
Use for dipping tortillas or as a sauce for collard green rolls.
