Anna's Lemony Brussels Sprouts Slaw

Ingredients

1 1⁄2 pounds
brussel sprouts

Granny Smith apple

Daikon radish

Watermelon radish

carrots
1⁄2
red onion (or shallot)
2 tablespoons
mayonnaise
1 teaspoon
Dijon mustard
2 tablespoons
fresh lemon juice
1 tablespoon
lemon zest
1⁄4 cup
extra virgin olive oil
 
salt and pepper (to taste)

Instructions

Use a food processor to shred the raw vegetables. Toss the shredded vegetables in a large bowl to combine well.

Make the dressing by measuring all the ingredients into a jar with a fitted lid. Cover and shake vigorously.

Dress the veggie slaw, taste and adjust seasoning by adding more salt or pepper. Let the slaw sit in the fridge for about an hour, then stir and taste again. When it's time to serve, garnish with fresh mint.
