Baked Salmon with Plum Ginger Salsa

olive oil

fresh ginger (grated fine)

red bell pepper (large sized)

yellow pepper (large sized)

red onion

1 bunch
fresh parsley
1 bunch
fresh cilantro
2 cloves
garlic (minced)
2 tablespoons
olive oil

lime (juiced)

lemon (juiced)

Instructions

Brush the baking dish with olive oil and place salmon skin side down. Brush with olive oil. Bake in a 375 degree oven until the salmon is almost done through, could be 7 – 12 minutes depending on thickness. Chop all of the salsa ingredients (small) except for the lime, lemon, and garlic. Place lemon and lime juice along with the olive oil and minced garlic into a food processor. Toss together with salsa and serve.
