Sweet potatoes are a great low-glycemic index, filling, and tasty food. Baking them with justa little bit of oil and spices is perfect. Each large sweet potato serves two as a side.
Preheat the oven to 425 degrees F. Cut potatoes in half lengthwise, then laying them on the flat side, cut into 1/4 inch-wide slices. In a small bowl or cup, mix the oil with the spices and arrowroot powder. Pour over potatoes and mix well with your hands. Place on a baking sheet ensuring there's space around each fry. Bake for 10 minutes. Turn potatoes. Bake for another 5 to 10 minutes until cirspy, but not burnt. (Recipe #188)
