Ingredients

1 teaspoon
coconut oil (or enough to coat the pan)
2
chopped vegetables (onion, leeks, peppers, mushrooms, greens, tomato, or whatever you have on hand)
 
eggs (2 to 4, as desired)
1 tablespoon
water
 
salt and pepper (to taste)

Instructions

Heat oil in a small pan over medium heat. Add vegetables and saute for 3 minutes. Crack eggs in a bowl. Whisk eggs with water, salt and pepper and pour over eggs. Cook, stirring occasionally for 3 minutes until the eggs are firm.
