Carrot Tops Pesto

Ingredients

1 bunch
tops of very fresh carrots
1⁄2 cup
packed basil leaves
1 clove
garlic (chopped)
1⁄4 cup
raw nuts, such as almonds (coarsely chopped)
2 ounces
goat feta
1⁄2 cup
olive oil
 
salt to taste
Yields:
cup

Instructions

Combine the ingredients in a food processor, starting with three tablespoons of olive oil. Process and add olive oil as needed to get the desired consistency. Use as you would any pesto.
