Rinse caulflower and remove any leaves and stem. Grate using a food processor or a box grater.Heat oil in a large skillet over medium heat. Add the garlic and onions and saute for a few minutes until they begin to soften. Add cauliflower "rice", salt and pepper and saute for another 5 minutes. Remove from heat, stir in parsley and a squeeze of fresh lemon juice.Variations: This recipe can be modified by adding different spices, vegetables or fresh herbs. A mexican version may include red pepper, chile powder, cumin, cilantro and black beans. Or make it into chicken fried rice by adding chunks of chicken, tamari, scallion, snow peas, and as a final step mix in two eggs and cook covered for an additional 5 minutes.
