Chickpea Salad

Ingredients

2 cans
chickpeas (25 oz. cans)
1 can
black beans (25 oz. can)
2
lemons (juiced)
1⁄4 cup
olive oil
6 cloves
garlic (crushed)
1 teaspoon
salt (to taste, if permitted)
1⁄4 teaspoon
cayenne pepper

large tomatoes (diced)
1 cup
chopped vegetables of choice (optional: cucumber, peppers, radish, jicama, etc)
1 bunch
fresh cilantro (washed, dried and chopped)
1 bunch
fresh parsley (washed, dried and chopped)

Instructions

Drain and rinse beans. Whisk together lemon juice, olive oil, garlic, salt and cayenne. Combine all ingredients.
