Coconut Cream & Corn Chowder

Coconut cream is not the same as coconut milk. You can find it at specialty grocers like Trader Joe's.

Ingredients

large white onion (thinly sliced)
1 clove
garlic (chopped)
 
coconut oil (enough to coat bottom of pot)
1 can
coconut cream (small can)
3
ears of corn (cleaned, kernels cut off)
3⁄4 cups
chicken broth (substitute vegetable broth for vegetarian)
1⁄2 teaspoon
salt
1⁄4 teaspoon
pepper
1⁄4 teaspoon
ground ginger
1⁄2 teaspoon
red curry paste

Instructions

Saute onion and garlic in the coconut oil until very soft but not brown. Add remaining ingredients and let cook for about 15 minutes. You can puree half the soup if desired.
