Cranberry Sauce with Dates

This delicious dish can be used whenever you can find fresh cranberries. It isn't just a special occasion dish!

Ingredients

2 cups
fresh cranberries
1 cup
pitted dates ((medjool if available/affordable))
1⁄2 cup
water (may need more water to pot as it evaporates)
2 tablespoons
fresh lemon juice
1⁄2 teaspoon
cinnamon
1⁄8 teaspoon
salt

Instructions

 
  1. Soak dates in warm water for 10 minutes, then drain and chop.
  2. Stir all ingredients together in a saucepan over low heat.
  3. Bring to a simmer, and cook for a few minutes, stirring frequently, until the cranberries pop and the sauce thickens.
  4. You can use a fork or potato masher to break up the chunks. It's not necessary, it's a personal preference for chunky or smooth. You can also blend it.
  5. Adding water and cooking down adds sweetness.
