Dressing for Chicken Salad

You can use this dressing for about two lbs. of roasted chicken or turkey, cut into cubes. We added six ribs of sliced celery and a cup of chopped walnuts.

Ingredients

1⁄2 cup
organic or preferred mayonnaise
1
lime, juiced
1 teaspoon
flavorful vinegar (to taste)
2
shallots, chopped
2 cloves
garlic, chopped
2 tablespoons
walnut or preferred salad oil
 
salt (to taste, if allowed)
 
pepper (to taste)

Instructions

Combine the ingredients except the oil in a food processor. While it's running, slowly drizzle in 1-2 tablespoons of oil to achieve the desired consistency.
