Goat Cheddar Quiche

Ingredients

red pepper (chopped)

medium yellow onion (chopped)
1 package
spinach (washed and drained)
 
olive oil
1⁄2 cup
almonds (processed until like bread crumbs)

goat cheddar (grated)

plain goat yoghurt

Instructions

Coat the bottom of a frying pan with olive oil. Saute pepper and onion until translucent. Add spinach and toss until just wilted. In a separate bowl, mix eggs and yoghurt. Coat a pie pan with a thin coating of olive oil. Swirl almonds around the pan until it forms a nice, uniform coating.  Place the vegetable mix in the pie pan. Add grated cheddar, followed by egg mixture. Bake at 375 degrees for about a 45 – 50 minutes or until a knife inserted comes out clean.
