Lemony Quinoa

Ingredients

1⁄4 cup
pine nuts (toasted in a dry skillet)
1 cup
quinoa
2 cups
water
 
salt (to taste)
1⁄4 cup
lemon juice

celery stalks (chopped)
1⁄4
red onion (chopped)
1⁄4 teaspoon
cayenne pepper
1⁄2 teaspoon
cumin
1 bunch
parsley (chopped)

Instructions

Combine quinoa, water and salt, bring to boil, reduce to medium and cook until quinoa is tender, about 10 minutes. Combine quinoa, pine nuts, lemon juice, celery, onion, cayenne, cumin and parsley. Salt and pepper to taste.
