Meal in One Salad (Vegan & Goat Cheese Versions)

Ingredients

wild rice (cooked)

celery stalks (finely sliced)

red pepper (diced small)
1 cup
sprouts (such as mung beans)
1 cup
almonds (coarsely chopped)

fresh cilantro (chopped)

spinach (coarsely chopped)

tart apple (diced small)

lemon juice (or to taste)

goat milk cheddar (shredded; this is optional)

Instructions

Combine all ingredients except the apple and lemon juice, and place in a large shallow bowl. Sprinkle a little lemon juice on the apple as soon as you dice it to delay browning. Add to the salad. Serve with Garlic Dijon Dressing.
