Roasted Yams

Ingredients

medium yams
2 tablespoons
coconut oil
  dash
coarse salt
  dash
black pepper
1 tablespoon
dried herbs (rosemary or sage)

Instructions

Preheat oven to 400.Peel and wash the yams. Cut into one-inch cubes.Place oil in a roasting pan and toss the yams to coat. Sprinkle with salt, pepper, and dried herbs and toss.Bake, tossing every ten minutes or so, until done, about 45 minutes.
