Shrimp & Chili Peppers in Coconut Oil

Ingredients

2 pounds
shrimp
1
piece of ginger (minced)
 
coconut fat (to coat the pan)
 
chili peppers (heat according to taste)
1 pound
mushrooms
1
red bell pepper
1
yellow bell pepper
1 cup
fresh herbs

Instructions

Heat coconut fat. Sauté ginger and shrimp until pink and remove with slotted spoon. Add red and yellow peppers to remaining oil, and stir fry. Add mushrooms and cook until almost tender. Add chili peppers and fresh herbs. Return shrimp. Heat thoroughly.
