4medium summer squash (washed and julienned)
3 tablespoonschopped fresh basil
4 tablespoonsfresh grated parmesan cheese
1⁄4 cupred wine vinegar
1 tablespoonchopped garlic scapes (or 2 teaspoons minced garlic)
1⁄4 cupolive oil
1⁄4 teaspoonagave nectar (or a few drops of stevia)
Combine the squash, basil, cheese and garlic in a bowl. Whisk together remaining ingredients, and pour over squash mixture. Chill for one hour, then serve.
